Do you know that you can buy frozen, pre-cut onions in the grocery store?
I have to admit that that really strikes me as lazy. You can't cut your own onion? Really? Has the world really come to this?
I suppose it is convenient, but certainly more expensive then cutting your own onions. And they probably add preservatives of some sort.
Well, take this convenient frozen prepackaged onion makers: Did you know that you can freeze your own onions?
Yep. No secret to it - just chop them up (perfect for tacos, spaghetti sauce, casseroles and the like) or slice them (for stir-fry, fajitas, etc.) and freeze 'em.
Here is what I did:
I purchased three bags of onions on sale for $.99 bag at Aldi. I cut off the outer papery layer and chopped most of the onions. The other onions I sliced by cutting the onion in half and slicing each half of onion. I cried more than when I sent my oldest off to kindergarten. But that is OK, because I only have to do this twice a year - two times a year I cry while cutting the onions, my hands smell like onions, I wash up the onion-smelling knife and cutting board. That beats having to battle the onion a few times a week! Not to mention all the time I save by doing it at once for 10 minutes verses a minute or two 3 times a week all year long!
Spread the onions on a single layer on a cookie sheet, cover with plastic wrap (to contain the smell) and put in the freezer for a few hours or until frozen (in the winter, you can just set them outside if you live in the frozen Tundra, like we in MN do).
Take them out of the freezer, break them up with a spoon or spatula and scoop them into freezer bags. Put the smaller freezer bags of onions into larger freezer bags (double bagging) and store in the freezer.
Since you froze them individually (instead of bagging them right after chopping them), they will not be frozen into a large clump and you can easily just grab as much as you need for your recipe. No tears involved!

I love doing this with Peppers too - it was handy when all the peppers in our garden seemed to ripen at once last year!
I totally do this! It works for strips or chopped peppers (bell) too! that's just one more thing I can stock up on when they're on sale! I should have posted on that... so glad you did! Love your blog... I'll be adding you to my blog roll.

Well, I can't cut my own onions because it gives me a migraine, but I keep meaning to get DH to chop me a whole bunch. Thanks for the reminder!
So I guess the smart girl you are, you know to wash your hands, then rub them on your stainless faucet and that removes the smell, but . . . did you know that if you cut up bell peppers, removing the seeds, place in a baggy, fill with water and freeze, they will keep their crispness, just thaw, it doen't take long if block of ice isn't to thick. FYI
cheri, jennifer (niffer) and shell: Argh - I am kicking myself for forgetting the paragraph about freezeing peppers, too! Yes, it works great - I usually do some diced, some cut into big chunks and some in strips. I have never tried freezing them in water! Can you eat them raw when they thaw?? That would be so cool!

I do this with peppers as well. And tomatoes from the garden. Just pack in sandwich size bags. Great for stir frys and soups and stuff. I also make extra mashed potatoes and freaze them for another meal. Crazy to pay extra for precooked potatoes. lol.

Great idea! I'm going to try it next week. Since I'll be chopping a lot of onion, I'll use my food processor which will make it go much faster.
I do this too it's so nice to have them precut when I'm trying to cook with the kids around
I do this with the onions and peppers we grow in our garden. Only this year the peppers didn't do so well so we only have frozen onions...unless I find a great sale on peppers. :) Great post!

You can even take it a step further and saute all those soon to go bad onions all at once, then package them in 1 cup increments and freeze. Then the next time a recipe calls for you to saute onions you already have just toss your frozen ones in.
